Grilled Stone Fruit & Goat Cheese Salad Recipe

Ingredients

4 stone fruit, such as peaches, apricots, or plums 
3 cups arugula  
¾ cup goat cheese 
1 orange  
½ garlic clove  
1 tablespoon honey  
1/3-½ cup extra-virgin olive oil  
½ cup pistachios 
1 teaspoon sea salt 
Freshly cracked black pepper

Method

Preheat the grill over high heat.

Cut the stone fruit in half, removing the pit, and sear face down until golden and slightly charred. Remove from heat.

On a large platter, make a bed of arugula and place the grilled stone fruit on top.

Next, place tablespoon-sized dollops of goat cheese around the fruit.

Zest and juice the orange into a small bowl, then mince the garlic and add it to the bowl with the orange juice. Add the honey and olive oil and whisk to combine.

Drizzle the vinaigrette over the salad. Roughly chop the pistachios and sprinkle over the salad, then season with salt and freshly cracked black pepper. Enjoy immediately.
